Eggs in a Basket: A Valentines Tradition

One of the first memories that I have of Nick and I is from Fraser Island in Australia, when the two of us were tasked with making breakfast for the group. Sometime while on the island I was taught to make a delicious breakfast treat nicknamed "eggs in a basket".  Simply butter a piece of toast, cut a hole in it (I often use a heart shaped cookie cutter, but this year we used a shot glass), put it in a skillet on very low heat, cook one side and then flip it over.  Crack an egg in the hole. It's best cooked over easy, but for people who cant stand a runny egg (me), just keep cooking it until it's almost all done, and then flip it quickly to finish it off. I can't remember if Nick and I made this on Fraser Island together, and perhaps I'm meshing different memories from those days on Fraser Island, but either way it has become a bit of a tradition for us to have eggs in a basket on Valentine's Day Morning. This year we added a twist by making the basket a grilled cheese!

Nick also surprised me with heart toast the day before Valentine's Day. Somehow I'd like to let him know that this too can become tradition if he wants!  If only I had a blog where I could share those feelings.....
